Gnocchi
  1. Bake potatoes on a bed of salt, peel while still hot, and pass through vegetable mill or potato ricer. Allow to cool completely.
  2. Mix potato starch, cake meal, salt, parmesan cheese, nutmeg in a medium bowl.
  3. In a separate large bowl, add cooled potatoes and mix with egg yolks.
  4. Add the cake meal mix to the potato mix, and fold until cake meal mix is completely incorporated.
  5. Roll and cut gnocchi into individual shapes.
  6. When ready to eat gnocchi, bring a large pot of salted water to a boil. Add gnocchi, and cook 2 minutes.
  7. Toss with prepared tomato sauce.
Tomato Sauce
  1. In a large pan, heat olive oil. Add minced garlic and cook 1-2 minutes, just until fragrant.
  2. Add tomatoes, break them with a spoon, bring to a boil and then turn down to a simmer. Add salt, pepper and chili flakes to taste. Simmer sauce 25-30 minutes.
  3. Remove from heat, add 4 basil leaves per plate.
